Fourteen months of research and $10 million in investment went into the crunch on this fried chicken.
Coqodaq is one of the hardest reservations to get in New York City, and not just because the fried chicken is good. The Bucket List is their signature menu format featuring four sauces, banchan, and two full courses of what might be the best fried chicken I've ever had. And the part that surprised me most is the entire thing is 100% gluten free.
In this video I'm breaking down everything that makes it work. Proper whole bird butchery, a brined and double fried gluten free batter that's actually superior to traditional flour, the gochujang and soy glazes, the scallion salad you've probably never heard of, and homemade banchan to round it all out.
