The Greatest Thing McDonald's Ever Invented
McDonald's-style hash browns made from scratch with just three potato ingredients, a golden crispy crust, and a method that makes them perfect for the freezer.
Nothing beats a good hash brown. As far as I'm concerned, it's the best thing on the McDonald's menu. But I don't eat McDonald's, and shredded potatoes have always given me trouble. So I wanted to figure out how to make that same iconic hash brown at home, only better.
The trick is par-cooking the potatoes, cooling them completely, and dicing them instead of shredding. Combine them with potato starch and dehydrated potato flakes, and you've got something closer to a dough. Shape them, freeze them, and fry them with a little beef tallow for that old-school flavor.
A proper hash brown, ready whenever you want one.
