The secret to authentic Montreal poutine is a dish most Americans have never had properly. I just got back from Montreal where my friend and local guide Josh Elkin took me to all the iconic spots to eat the city's most famous dish. Dark crispy fries, fresh squeaky cheese curds, and a rich fortified gravy that takes this way beyond anything you've had at a restaurant in the States. After thorough investigating, I brought every secret back home. In this video I'm making authentic Quebecois poutine from scratch. A two day process that starts with a fortified oxtail and chicken stock turned into the most flavorful gravy you've ever had, hand cut fries blanched and double fried to a shattering crisp, fresh cheddar cheese curds, and an oxtail topping that takes the whole thing to another level entirely.
