Set aside. In a large mixing bowl, combine the softened butter and 3 tablespoons of maple syrup. Cream together until smooth and well combined. Add the oat flour, spelt flour, baking powder, and salt to the bowl. Mix until the dry ingredients are fully incorporated. Stir in the Greek yogurt, vanilla extract, and eggs. Continue mixing until the batter is smooth and all the flour is fully integrated. Grease an 8-inch cast iron skillet or baking pan. Pour the cake batter into the skillet, spreading it evenly with a spatula. Sprinkle the chopped almonds (or almond flour) over the top of the batter. Arrange the halved plums on top of the cake in a single layer, cut side up. Drizzle the remaining 1 tablespoon of maple syrup over the plums. Preheat your oven to 340°F (170°C). Bake the cake for 50 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the skillet. Once cooled, transfer it to a cutting board and slice it into 8 equal pieces. Serve and enjoy!
