Desperados III doesn't really support ultrawide natively because it's suffering from being way too zoomed in for ultrawide but Rose from PCGamingWiki has come to the rescue yet again to fix that.
Rose has created a patcher that removes the zoom restrictions for ultrawide users, it's very simple to apply.
Download the patcher from here:

Run the patcher and locate the Assembly-CSharp.dll file in
Desperados III\Desperados III_Data\Managed\ and hit apply.
Start the game and you should be all set!
