Hedgehog Tartar Recipe:
STEP 1 - Prepare your ground beef with egg yolk, cognac, capers and anchovies
STEP 2 - Fill the mould with the beef tartar
STEP 3 - Scoop out the shaped tartar onto the plate
STEP 4 - Use capers for the eyes
STEP 5 - use blackcurrant for the nose
STEP 6 - Use onion for the spikes
